It was just three weeks ago that a good friend called me up and said “hey, I have a new product for you for at Sweet Evolution, a gluten and dairy free Red Velvet Cake….”  Being that I have never tasted a red velvet cake, nor knew what it was made from, I had to do my research.  First, is there even a demand for a red velvet cake or red velvet cupcakes and second, how is it made.  I was so surprised the number of reactions I have received via Twitter and Facebook as well as from friends and family.  Most gluten free people said that they have never tried a gluten free red velvet that did not taste like sand!  I researched gluten free recipes and found them limiting comparatively to other cakes and recipes online, but was ready for the challenge.  And a challenge it was, not to finish all the cakes I made too quick!  I found a few recipes for the red velvet and combined them, skewed them and made necessary changes for a tasteful gluten and dairy free cake (in my opinion)!

But, the real test is when you feed the cake to a non-gluten and dairy free taste tester, especially one who has no problem telling you to find a new recipe, my older brother!  I have a few friends who are avid taste testers, but you know friends, they may be a little too optimistic suggesting more icing on the cake or less cocoa, but to have a business man, one who has a knack for what people want, may be a bit more insightful or should I better say blunt.  After standing over his shoulder with his daughter eating the cake beside him, he takes his first bite.  I am anxiously waiting….

“Wow, it’s great.  No really, I am surprised, really really good Brooke.”  I am smiling and filled with excitement at this comment, even though, my husband (who is very picky when it comes to sweets), my niece and my mother are all gobbling away at the cake, my mother even taking a second piece!  Finally, I found my recipe and sometimes can not believe myself it is gluten and dairy free.

So today, I have finalized the last minute details and have launched on the website the new Gluten and Dairy Free Red Velvet Cake and Gluten and Dairy Free Red Velvet Cupcakes at Sweet Evolution!
